Tex Mex Pot Roast

another winner! this one is similar to 'mexican roast' but its a different style and different enough to keep in dinner rotations. tremendous flavor...and if you forget to put dinner in the crockpot in the morning (like i did yestarday), you can still make this one!! it only takes 4-6 hours on high!

tex mex pot roast

2 lb. chuck roast
1 tsp. chili powder
1 can chili beans - undrained
1 can mexi-corn - undrained
1 can rotel - undrained

rinse roast and place in crockpot. sprinkle chili powder, and dump the canned ingredients. mix it up a tad...and turn the crock on. its just that simple.
cook on low for 8-10 hours OR on high for 4-6 hours.

that meat is so tender and yummy! its great with mac 'n' cheese or mashed potatoes on the side!
