beef enchiladas

so, this is actually one i made up...purely what i happen to have in the pantry...and it turned out pretty good...the boys loved it, which is always a big deal to me!

beef enchiladas

1 lg. can mild enchilada sauce
1 lb. ground beef - cooked and drained
1 can fat free refried beans
1 can kidney beans
1/4 c. (or 1 packet) taco seasoning
1/2 c. salsa
12-16 tortillas
shredded cheese

brown beef and add taco seasoning (add a little water if needed). mix the beef, beans, and salsa. fill tortillas with mixture and roll into enchiladas...lining them in a 9x13 dish. pour enchilada sauce on top...covering all the tortillas. sprinkle with cheese.
bake at 350 degrees for 20-25 min. until bubbly.
make sure to have some tortilla chips on hand to eat with these!! :)
